Danish Cucumber Salad

A few days ago when Pat was at Morris and Carol's place talking with them about his new Torpedo Roadster T, Morris gave him a few parts he may be able to use. Carol sent him home with a couple of these good looking cucumbers she grows. They are burpless she tells us. So, I finally got around to making them into this salad that Pat likes.

Danish Style Cucumber Salad

2 long English cucumbers OR 3 regular cucumbers, unpeeled.
2 teaspoons salt
½ teaspoon pepper
1½ cups of sugar
2 cups of white vinegar
Dill
Rinse cucumber in cold water; dry but do not peel. Slice crosswise in very thin, almost transparent slices. Place in bowl. Sprinkle with salt and mix to coat evenly. Refrigerate for several hours; drain.
Combine pepper, sugar and vinegar, stirring until sugar dissolves. Add to cucumbers, mixing well. Add several sprigs of fresh dill or dried dill weed. Refrigerate for a couple of hours before serving. Makes four servings.
